This tasty orzo tomato soup will warm you up on a cold day!
This Tomato orzo soup is simple to make, fast, and healthy. Please enjoy with crackers, a grilled cheese, salad, or home made bread.
First start by sautéing your onions in the olive oil until translucent. Then add your garlic, tomato puree, paste, and all seasonings along with your parmesan rind for extra flavor.
Then add in your 6 cups of either broth or water to the mix, and let cook for about 30 mins before tasting to adjust any seasoning.
(The longer you cook the soup the better it'll be. However you can eat it once it comes together in about 45m-1h.)
While your soup is cooking on a medium/low flame and simmering. In a separate pot boil your orzo pasta per the instructions on the package.
(I made mine al dente or a little under so that when I added them to my soup later on they wouldn't over cook.)
After cooking the soup for about 45min-1h just taste for seasoning, and like I mentioned you can stop the cooking at this point. Or cook a bit longer for more developed flavors.
Once your finished cooking your soup and your orzo pasta is al dente then you will add a little bit of pasta to your bowl, and pour the soup over the pasta.
You can garnish with Feta, Chopped Mint, or Parsley.
