Description

Enjoy a tender, marinated skirt steak cooked on either the grill or in a cast iron skillet. Or any other skillet that you have. Serve with your favorite sides.

Ingredients
  • 1 Skirt Steak (About 2lbs)
  • Salt & Pepper to taste
  • 3 tablespoons Steak Seasoning
  • 2 tablespoons Cilantro
  • 4 tablespoons Worcestershire sauce
  • 2 tablespoons Minced Garlic
  • 1 Lime Juice
  • 1 Medium Onion
  • Handful of Mushrooms
  • 3 tablespoons Olive Oil

    Start by combining all of the ingredients in a bowl outside of your onions and mushrooms. This is your marinade, then warp up the bowl and place it in the fridge to marinate for at least 4 hours, longer if you can such as over night.

    Then about 45 mins before you're ready to grill or sear your skirt steak take it out of the fridge and let it come up to room temperature. So that it can relax. 

    Then fire up your grill or skillet and let it get smoking hot. Because you have a marinade on you need it to be very hot so that the meat doesn’t poach. 

    My favorite is on the grill, because you can get a better char. Cook on both sides for about 4-5 mins.

    Skirt steak is very thin, so the end pieces will be a different temperature from the middle. (This is good if you're serving different people with different temp preferences.)

    Meanwhile in a separate small skillet or cast iron, caramelize your mushrooms and onions in EVOO and add salt and pepper to taste.

    Let your skirt steak rest for at about 10 mins before cutting into it.
